This wonderful recipe I discovered and changed a bit to suit my taste is delicious in the fall, or any other time of the year !! Belive me, These spiced Pumpkin Cupcakes are sure to be a hit wherever you serve them !!
YOU'LL NEED FOR THE RECIPE :
#Cupcakes:
- Butter: quarter a cup (softened)
- Unsweetened Applesauce: 3/4 cup
- Sugar: 1 cup (granulated)
- Brown Sugar: 3/4 cup (packed Firmly)
- Eggs: 2
- Fat Free Milk: 3/4 Cup
- Lemon Juice: 1 TBSP
- Pumpkin Puree: 1 can (about 15 Ounce)
- All Purpose Flour: 2 1/3 cups
- Pumpkin Pie Spice: 1 TBSP
- Ground Cinnamon: 1 tspn
- Baking Powder: 1 tspn
- Salt: 3/4 tspn
- Baking Soda: half a tspn
- Ground Ginger: half a tspn
#Frosting:
- Reduced Fat Cream Cheese: 1 package, about 8 Ounce (Not Fat Free!)
- Butter: 1/4 cup (softened)
- Confectioners Sugar: 4 cups
- Vanilla Extract: 1 tspn
- Ground Cinnamon: 2 tspns
* This serve about 24 Cupcakes with Frosting
METHOD OF WORK :
1. I set the temperature of my oven to 350 degrees before starting. Then you're going to get a large mixing bowl and add into butter, applesauce, sugars, and eggs, beating over medium speed until combined. After that add in pumpkin and beat constantly until thoroughly incorporated. Alright, combine together milk and lemon juice in a liquid measuring cup and set aside.
2. The remaining dry ingredients need to be combined in a medium bowl at this stage. You'll want to add, slowly, the dry ingredients to the pumpkin mixture over medium speed, alternating with the milk mixture. Always remember to beat well after each addition.
3. For this part, you may want to line cupcakes trays with paper liners and then spray lightly with a non-stick cooking spray. Make sure to fill cupcake liners 3/4 of the way full. Okay now, bake until a skewer inserted into the middle comes out clean, it takes around 22 minutes. Once done, you need to be remove from oven and allow to cool.
4. For the frosting, combine everything in a medium mixing bowl and beat over medium speed until ingredients begin to combine. And please increase speed slowly, beating constantly until a frosting is formed. To finish, I always frost & ENJOY !!
