
OMG...What a hearty, creamy, and very comforting Soup !! This Slow Cooker Ham and Potato is a simple and delicious soup loaded with potatoes, sweet carrots and tender ham. Needless to say, it's a cool weather staple in my household and perfect for any leftover baked ham!
I USE FOR THE RECIPE :
- Russet potatoes: 6-7 potatoes, cubed (8 cups)
- Cubed ham: 2 pckg (8 oz.)
- Low-sodium chicken broth: 1 carton (32 oz.)
- Heavy cream or half-and-half: 1 1/2 cups
- Sour cream: half a cup
- All-purpose flour: quarter a cup
- Celery: 2 ribs (diced)
- Carrot: 2 (diced)
- Yellow onion: 1 medium (diced)
- Kosher salt and freshly ground pepper: to taste
DIRECTIONS :
1. In the beginning, place potatoes, ham, celery, carrots and onion In slow cooker. Generously season with salt and pepper then pour in chicken broth.
2. Okay now, you'll want to cover slow cooker and cook on high until potatoes are cooked through and fork tender, it takes around 4 to 5 hours. Lightly mash potatoes (they don’t need to be smooth).
3. Then you're going to get a small bowl and whisk in heavy cream and flour until flour is completely dissolved. Make sure to stir mixture into soup with sour cream.
4. Slow cooker needs to be coverd again. Immediately cook on high until soup is hot and creamy, it takes around 15 to 20 minutes.
5. The last step to make is to ladle soup into serving bowls. Serve hot & Enjoy!
