I enjoy all kinds of seafood, but lobster tails have got to be one of my favorite foods. The way they taste with homemade lemon and garlic butter will blow your mind too! It is very rich and delicious. You cannot resist it.
* Ingredients
° 4 lobster tails
° 5 to 6 ounces each
° 1 tablespoon finely chopped fresh parsley, plus more

° 2 crushed garlic cloves
° 1 teaspoon Dijon mustard
° 1/4 teaspoon salt
° 1/8 teaspoon black pepper
° 1 1/2 tablespoons olive oil
° 1 1/2 tablespoons fresh lemon juice
° 4 tablespoons of unsalted butter, divided

Use kitchen scissors to cut the top crust from the lobster's tail, stop at the base of the tail and trim the top portion of the flesh as you go.
Turn the tail over to the transparent back side and break the ribs in the middle. This will help open the scab.
Carefully open the shell with thumbs and fingers and loosen the flesh from the shell (remove the vein if present). Lift the meat off the skin while keeping it attached at the base. Press the crust together and place the lobster on top. Most of the lobster meat should be above the shell.
How to make roast lobster tails:
Place the rack in the center of the oven so the meaty tops of the lobster's tails are at least 6 inches from the top heating element. Preheat the oven to grill over high heat.

Roast lobster tails over a high heat for 10-11 minutes (or depending on the size of the lobster's tail - see diagram). When finished, the lobster meat should be opaque and white in the center and score 145 degrees Fahrenheit on the instant reading thermometer. Transfer it to a serving plate and garnish with parsley, as desired.
To prepare the garlic lemon butter: Drain the broth from a roasting pan in a small saucepan and mix with 2 tablespoons of remaining butter. Leave on a low heat and remove from heat. Pour over lobster tails or divide into bowls and use as a sauce.
