Lemon Meringue Cheesecake


Aaaaah..this is the best Lemon Meringue Cheesecake of both worlds 😋 👌 👍 !! The flavors are absolutely amazing and it's great any time of year and sure to impress your guests.


– Shortbread cookie crumbs: 2 cups

– Cream cheese: 3 packages (softened) 

– White sugar: 1 cup (granulated) 

– Sour cream: 1 cup

– Lemon curd: 1 cup and half

– Fresh lemon juice: 1/4 cup

– Butter: 1/4 cup (melted) 

– Egg: 4, plus 4 egg whites

– Lemon: 1 (zested)

– Vanilla extract: 1 tsp


1. First pf all, make sure the temperature of your oven is set to 325℉.

2. Then you're going to get a large mixing bowl and mix in cookie crumbs with melted butter. Make sure to press the mixture in the bottom of a greased springform pan.

3. In the meantime, beat cream cheese and sour cream in another bowl until creamy and smooth. After that, add eggs one at a time, after each addition beat well.

4. You’ll want to add vanilla extract, lemon zest, and lemon juice and mix well. And please spread the mixture over cookie crust.

5. Okay, baking time is 60 minutes. Once done, remove the pan and allow to cool completely.

P.S: make sure your oven is set to 375℉ at this point.

6. In a medium bowl with an electric mixer, beat egg whites until soft. Immediately add 2 tablespoons white sugar and beat again until stiff.

7. The next step is to spread lemon curd over the cheesecake, then add whipped egg. Return to the oven until meringue is golden brown, it takes around 12 minutes.

8. All that needs to be done now is to chill the cheesecake in the refrigerator for at least 2 hours before serving.
